Some do it for just health reasons. Their doctor said giving up red meat will help. Others are in the middle & want to help not only themselves but the creatures. Top of the list are the extremists, who don't eat any meat but also don't do honey, wear leather, may be very proactive in things like Peta.
I'm in the middle. I do eat meat on occasion, have fiber intolerance so it's hard to eat a lot of fruits/vegs esp. raw. But I was a vegetarian for over 2 decades leaning towards veganism.

I initially went vegetarian in 1996 as I worked at an animal sanctuary at the time and I couldn't reconcile working for animals with eating them. This also fuelled my animal rights interest. My health started to fail in 2007 due to thyroid problems, culminating in many medical appointments. At one of them, my cholesterol level was deemed excellent due to my vegetarianism. I went full vegan in 2017. I also believe animals have spirits and that eating them will impede their path to a greater plane. I am vegan for every reason there is to be vegan because they all make sense to me.

I've been vegetarian for as long as I can remember as it aligns with my Buddhist beliefs and my personal principles about animal cruelty and abuse. I hope I can become fully vegan one day.

I'm also careful about consuming things like bread that may have milk in it. 'cos unless it's organic, more than likely it's CAFO milk. Same w/ snacks, crackers, candy bars.
